CMC POWDER

This product will give you a gum paste that is pure white in color and very easy to work with. CMC Powder can be used with fondant to make a quick transition to gum paste. Add 1-2 teaspoons of CMC powder to 1 pound of fondant. Knead it in and let it rest overnight before using it for best results. It can be used immediately, if necessary.

GUAR GUM & PECTIN

Guar gum can be used for thickening cold and hot liquids, to make hot gels, light foams, and as an emulsion stabilizer. Guar gum can be used for cottage cheeses, curds, yogurt, sauces, soups, and frozen desserts.


Pectin is a gelling agent, thickening agent, and stabilizer in food. The classical application is giving the jelly-like consistency to jams or marmalades, which would otherwise be sweet juices.

GELATIN

Pork Gelatin - Bloom 250 is a gelatin product that forms solutions with high transparency, light color, and is free from taste and odor characteristics. This product is well suited to most food applications such as dairy, confectionery, desserts, beverage, and meat products, as well as pharmaceutical applications such as gelatin capsules and pills.

Beef Powder Gelatin. The first step to using Culinary Gelatin is to soak it in a cool liquid, for about 5 minutes or so, to hydrate it. Gelatin is naturally very hygroscopic - it readily absorbs and retains water very easily - so be sure to store it in an airtight container in a dry, clean area.

Leaf Gelatin is made when the gelatin is dried into a flat sheet. Some consider leaf gelatin the more preferred setting agent in making jelly, as it gives a very clear, clean, tasteless set. Perfect for use in desserts, fondants, foams, meringues, glazes, mousses, jellies, and more. Leaf Gelatin Sheets 50 grams - 10 Sheets per Pack.
